my mother: a tribute

She's deaf in one ear. She's the sole supporter of the Fuller Brush man. She has the right idea about footwear--she wears flip-flops all year-round. She'll cook you five meals for one birthday dinner. Pretty much she'll do anything and everything for you or anyone else. This is my mom. She's the most amazing person I know.

If I were to describe her to you, the first word that would come out of my mouth would be "charity." She really is the most charitable person you could ever meet. Ask any of the families of the kids she tends. They'll tell you the same thing. That's what I admire most about her. She's also selfless. Her family comes first. She makes sure we have everything we need and most of the things we want, even if that means she has to go without.

She has a deep, rooted faith in the gospel. Her testimony has always been a source of strength to me. She lives what she believes. She is a Christ-like example in my life.

Decisions may stress her out, but she always makes the right ones. She's creative and crafty. She is the one who originated the card-stock gene. I wish I could have her handwriting. She's smart and innovative and always creating creative solutions to life's day-to-day problems.

Mom, I love you. Thanks for all the love and support you have given me through the years. You have always been there to cheer me on in life--usually with a flip-chart sign and some balloons! I can't even express the example you have set for me. I hope to one day be like you in every way. You truly are amazing.

in that letter tell him we need better bike lanes!
channel your inner lance armstrong
plan your own tour de france
join a local advocacy group
ride to the grocery store
ride to the park
ride to school
watch the movie Breaking Away
make art out of bike parts
buy a cruiser bike
buy a basket and horn for your cruiser bike
plan your next bike tour vacation
tune up an old junker
just get out there and ride!

All-American Pot Pie

the insides:
.5 T butter
4 C total of any of the following veggies: corn, carrot, red bell pepper, zucchini, spinach leaves (firmly packed), sliced onions, potato...
1 small garlic clove, minced
1.5 T flour
1 C warm milk
1 pinch fresh or dried thyme
.75 t salt
black pepper to taste
melt the butter in a skillet. saute the vegetables for five minutes, stirring often. Add the garlic, saute for five minutes more. sprinkle three tablespoons flour over the veggies and stir over the heat for two more minutes. add the warm milk slowly, stirring all the while to avoid lumps. stir in the thyme. bring the sauce to a simmer and cook it until the it thickens. continue to cook until the vegetables are tender. add one-fourth teaspoon of salt and plenty of pepper.

the dough, et cetera:
cut a half-stick of cold butter into three-fourths cups of flour and one-fourth teaspon of salt. (cut the butter until the pieces are no larger than a pea) add two tablespoons of ice water and stir to incorporate all the flour. add more water or flour as necessary to make a soft moist dough. work it in the palm of your hand on a hard surface. form it into a flattened ball. chill the dough for thirty minutes.

roll the dough into a circle slightly larger than the diameter of the casserole dish. place it on top and pinch the rim so it clings to the dish. cut four one-inch long slits in the dough.

bake at 400 degrees for about twenty minutes, or until the filling is bubbling and the crust golden. Serve and enjoy!
